• O.M.G. This was the best burger I’ve ever had. Or perhaps I was so hungry yesterday so that almost anything would taste good. Anyhow 😬 A black bean/quinoa burger with a wholemeal bun, spinach, tomato, avocado, tomato paste, sriracha mayo and nutritional yeast (nooch). The cheesy flavour was just the 💣!
Sweet potato brownies
Recipe adjusted from fivesechealth
Ingredients:
4 baked and peeled sweet potatoes (about 450g)
75g almond flour
60g oats
1,5 dl cacao powder
4 tbsp agave syrup
2 tbsp fiber syrup (I used this)
2 tbsp chocolate stevia powder (I used this)
Topping (optional):
Vegan chocolate protein powder (I used this)
Water
Nuts or berries (I used cashews)
Instruction: - Set the oven to 180C/350F. - Add all ingredients into a food processor and mix until smooth. - Pour the batter into a baking dish and put in the middle of the oven for 25 minutes. - When the brownie is done, leave to cool so that it will be easier to cut. - Now you can mix you protein powder with a little bit of water at a time so that you get the right consistency. - When the brownie has cooled, cut into 8 pieces with a sharp knife. Top with the protein cream and nuts or berries of choice, then enjoy!

•Onion (half a big one) •Garlic (2-3 cloves) •Kale (1-2 handfuls) •Celery (2 stalks) •Zucchini (¾ of a medium big) •Red and green pepper (two halves) •Red lentils (3-5 dl cooked) •Coconut milk (500 ml) •Sweet chilli sauce (2 tbsp) •Curry, turmeric, cumin, coriander, oregano, pepper, salt, chilli, cayenne pepper

Blueberry cheesecake (no bake, gluten free, vegan)
Base:
3/4 cup oats
1 cup almond flour (mine from Sukrin)
3 tbsp coconut flakes
2 tbsp coconut oil
8-12 dates
A dash of plant milk
Optimal: salt and cinnamon
Press the base into a mould. Let sit in the fridge to set whilst making the filling.
Filling:
1 cup cashews (soaked for at least 4 hours)
1 can coconut cream (the thick part)
4 tbsp maple syrup
Optimal: 1 tsp liquorice
Pour the filling on top of the base. Place in the fridge to set 1 hour before pouring the berries on top.
Topping:
3/4 cup blueberries, thawed
1-2 tbsp chia seeds
Optional: sweetener
You can mash the blueberries if you want but it is not needed. The absolute best is if the cake can sit in the fridge overnight before serving.
