Ingredients: 2 cups shredded broccoli. 2 cups shredded Brussels sprouts. 1/2 cup vegan mayonnaise. 2 tablespoons lemon juice. 1 tablespoon maple syrup. 1 teaspoon curry powder. 1/4 teaspoon garlic powder. Salt and pepper to taste. 1/4 cup chopped almonds optional, for garnish. 1/4 cup dried cranberries optional, for garnish.
Instructions: Shred the broccoli and Brussels sprouts and put them in a large bowl. Mix vegan mayonnaise, lemon juice, maple syrup, curry powder, garlic powder, salt, and pepper in a small bowl with a whisk until the mixture is smooth. Add the dressing to the shredded vegetables and mix them around until they are well covered. Put it in the fridge for at least 30 minutes to let the flavors mix. If you want, you can add chopped almonds and dried cranberries as a garnish before serving.
