These Vegan BBQ Pulled Jackfruit Tacos taste great and are a great alternative to regular pulled pork tacos. Jackfruit tastes like meat and goes well with smoky BBQ flavors, so it's a good choice for both vegans and meat eaters.
Ingredients: 2 cans young green jackfruit in brine, drained and rinsed. 1 tablespoon olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 cup BBQ sauce. 1/2 cup vegetable broth. 1 teaspoon smoked paprika. 1/2 teaspoon cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 8 small tortillas. 1 cup shredded cabbage. 1 avocado, sliced. Fresh cilantro, for garnish. Lime wedges, for serving.
Instructions: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, saut until softened, about 5 minutes. Add the drained jackfruit to the skillet, and break it up using a fork or potato masher until it resembles pulled pork. Stir in BBQ sauce, vegetable broth, smoked paprika, cumin, chili powder, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened. While the jackfruit is cooking, warm the tortillas in a separate skillet or oven. Assemble the tacos by placing a scoop of the BBQ jackfruit mixture onto each tortilla, then top with shredded cabbage, avocado slices, and fresh cilantro. Serve hot with lime wedges on the side for squeezing.
