A spicy and comforting soup with soft-cooked eggs that goes well with the rich flavors of bacon and the kick of Sriracha. With its hearty and filling nature, this soup is great for cold days or when you're craving something tasty and warm.
Ingredients: 4 slices bacon, chopped. 1 onion, diced. 2 cloves garlic, minced. 6 cups chicken broth. 1/4 cup Sriracha sauce. 4 large eggs. Salt and pepper to taste. Green onions, sliced for garnish. Sesame seeds for garnish.
Instructions: In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon grease in the pot. Add diced onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another 1-2 minutes. Pour in chicken broth and Sriracha sauce. Bring to a simmer. Crack eggs, one at a time, into a small bowl and gently slide them into the simmering soup. Let eggs cook for about 3-4 minutes until whites are set but yolks are still runny. Season soup with salt and pepper to taste. Stir gently. Divide soup into bowls. Top each serving with crispy bacon, sliced green onions, and sesame seeds. Serve hot and enjoy!
