Pecan Sandies are delicate and nutty shortbread cookies with a rich pecan flavor. They're ideal for drinking with tea or coffee.
Ingredients: 1 cup butter, softened. 1/2 cup granulated sugar. 2 teaspoons vanilla extract. 2 cups all-purpose flour. 1 cup finely chopped pecans. 1/4 teaspoon salt. 1/4 cup powdered sugar for coating.
Instructions: Preheat the oven to 325F 160C. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Stir in the vanilla extract. Gradually add the all-purpose flour, chopped pecans, and salt. Mix until well combined. Shape the dough into small balls or use a cookie scoop to portion the dough onto ungreased baking sheets. Gently flatten each dough ball with the bottom of a glass or your hand. Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cool, roll them in powdered sugar to coat. Store the Pecan Sandies cookies in an airtight container.
