This vegan cheesesteak sandwich has tasty portobello mushrooms, onions, and peppers, and it's topped with melty vegan cheese.
Ingredients: 4 large portobello mushrooms, stems removed and sliced. 2 tablespoons olive oil. 1 onion, thinly sliced. 2 bell peppers, thinly sliced. 4 cloves garlic, minced. 1 teaspoon smoked paprika. 1 teaspoon dried thyme. Salt and pepper to taste. 4 hoagie rolls, sliced. 1 cup vegan cheese shreds. 1/4 cup vegan mayonnaise. 1 tablespoon Dijon mustard. 2 tablespoons chopped fresh parsley, for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Warm up the olive oil in a big pan over medium-low heat. Put in the onions and bell peppers and cook them for 5 to 7 minutes, until they get soft. Spice it up with smoked paprika, dried thyme, salt, and pepper. Go on and cook for two more minutes. Put sliced portobello mushrooms in the pan and cook for 5 to 7 minutes, until they release their water and get soft. Cut the hoagie rolls in half and spread vegan mayonnaise and Dijon mustard on one side of each one. Put equal amounts of the cooked mushroom mixture on each hoagie roll. Then, top with vegan cheese shreds. After putting the sandwiches together on a baking sheet, heat the oven and bake them for 5 to 7 minutes, or until the cheese melts and bubbles.
