Scallops, eggs and bacon ramen tonight! I made the stock using a red fish head, leeks, carrots, celery, onion, shiitake mushroom, green onion and water. The ramen broth included the fish stock, white miso, soy sauce, mirin, white wine and dashi. Sea scallops, crispy bacon, soft boiled eggs, sliced fish cake, scallions, sesame seed and hot chili oil were added on top when serving. We also made some pot stickers. This ramen was packed with flavor and definitely rivals anything I’ve had in town. Pizza night for chicken week! We made two varieties tonight. Chicken, bacon & ranch and a BBQ chicken. The CBR is made with ranch for the sauce, diced grilled chicken seasoned with @meatchurch Texas Sugar, chopped @blacklabelbacon, red onion and a mix of cheddar and mozzarella cheeses on a super thin premade crust. The BBQ chicken pizza was made with @sbrbbq barbecue sauce for the base, diced grilled chicken, red onion, cilantro and mixed cheeses on a cracker thin crust. We also made some smaller ones for grandma and the kid. One with green olives and bacon, loaded pepperoni and a pepperoni, bacon and provel. These pizzas took about 7 minutes to cook and turned out amazing! I need to cook these in the @recteq_official RT-700 more often. Chicken quesadillas tonight! I did a mix of breast and thighs from @smartchicken_official seasoned with @meatchurch Dia De La Fajita. They’re made with sautéed jalapeños, mushrooms, red onion, green bell, @lapreferidainc refried beans and @hyvee Mexican cheese blend. I added a bean layer to each side of the dilla. Was bomb! My sauce of choice was @cholulahotsauce sweet habanero, but it tried a new Carolina reaper sauce from @bravadospice. Omg, And was sweating from head to toe for about 10 minutes. Good stuff!
