This tasty and nutritious Paleo-friendly recipe, Grilled Lemon Herb Chicken, is ideal for your Paleo diet. Delicious lemon and herb flavors are infused into the chicken by the zesty marinade, which makes it a delightful and simple option for a Paleo dinner.
Ingredients: 4 boneless, skinless chicken breasts. 2 lemons, juiced and zested. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Fresh parsley for garnish.
Instructions: To make the marinade, place the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper in a bowl. Pour the marinade over the chicken breasts and place them in a shallow dish or resealable plastic bag. To marinate, close the bag or cover the dish and place it in the refrigerator for at least 30 minutes or up to 4 hours. Set your grill's temperature to medium-high. After removing the chicken from the marinade, grill it for 67 minutes on each side, or until it is cooked through and the internal temperature reaches 165F 74C. Once done, remove the chicken from the grill and let it rest for a few minutes. Serve hot, garnished with fresh parsley.
