Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into cubes. 1/4 cup olive oil. 1/4 cup Greek yogurt. 3 cloves garlic, minced. 1 tsp dried oregano. 1 tsp dried thyme. 1/2 tsp paprika. Salt and pepper to taste. Juice of 1 lemon. Wooden skewers, soaked in water.
Instructions: In a bowl, combine olive oil, Greek yogurt, minced garlic, dried oregano, dried thyme, paprika, salt, pepper, and lemon juice. Mix well to create the marinade. Add chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or preferably overnight for best flavor. Preheat the grill to medium-high heat. Thread marinated chicken cubes onto soaked wooden skewers. Grill the chicken skewers for 10-15 minutes, turning occasionally, until cooked through and nicely charred.
