Grilled Limoncello Chicken is a tasty dish that tastes great with Limoncello liqueur and fresh lemon juice. The marinade gives the juicy chicken breasts a tangy kick, which makes it a great choice for a BBQ or a tasty dinner during the week.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup Limoncello liqueur. 1/2 cup fresh lemon juice. 1/4 cup olive oil. 3 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 2 tablespoons fresh parsley, chopped for garnish.
Instructions: Olive oil, minced garlic, oregano, salt, black pepper, and red pepper flakes should all be mixed together in a bowl with a whisk. Pour half of the marinade over the chicken breasts in a plastic bag that can be closed again. Put the bag in the fridge for at least an hour, or better yet, overnight. Warm up the grill over medium-high heat. Take the chicken out of the marinade and throw away the marinade. I grilled the chicken for 6 to 8 minutes on each side, or until the internal temperature reached 165F 74C and the chicken was fully cooked. During the last few minutes of grilling, baste the chicken with the rest of the marinade. Take the chicken off the grill and give it a minute or two to rest. Add chopped parsley as a garnish before serving. Enjoy the Grilled Limoncello Chicken while it's still hot!
