Ingredients: 1 lb boneless chicken breasts, cut into 1-inch cubes. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. 8 wooden skewers, soaked in water for 30 minutes. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon paprika. 1 teaspoon cumin. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 lemon, juiced. Fresh parsley, for garnish.
Instructions: Put the lemon juice, olive oil, minced garlic, paprika, cumin, salt, black pepper, and salt into a bowl. This will make a marinade. Put the chicken, red bell pepper, green bell pepper, and red onion on the wet wooden skewers one after the other. Fill a small dish with water and pour the marinade over the skewers. Be sure to coat the kabobs well. Cover and put in the fridge for at least 30 minutes. For the best flavor, let it sit overnight. Warm up the grill over medium-high heat. The chicken kabobs should be cooked on the grill for 10 to 12 minutes, turning them over every so often, until the chicken is fully cooked and the vegetables are slightly charred.
