Ingredients: 1 cup diced onions. 1 cup diced celery. 1 cup diced carrots. 2 cloves garlic, minced. 1/2 cup unsalted butter. 1/2 cup all-purpose flour. 4 cups chicken broth. 2 cups whole milk. 2 cups shredded Monterey Jack cheese. 1 cup shredded sharp cheddar cheese. 1 teaspoon Dijon mustard. Salt and pepper to taste. Chopped fresh chives for garnish.
Instructions: In a large pot, saut onions, celery, carrots, and garlic in butter until vegetables are tender. Stir in flour and cook for 2 minutes to eliminate the raw flour taste. Gradually whisk in chicken broth and milk, ensuring a smooth consistency. Bring the mixture to a simmer, stirring constantly until it thickens. Reduce heat and add Monterey Jack and cheddar cheeses, stirring until melted and smooth. Stir in Dijon mustard, and season with salt and pepper to taste. Simmer for an additional 10 minutes, allowing flavors to meld. Serve hot, garnished with chopped fresh chives.
