These Polenta Pizzas are a great appetizer or light meal, and they are incredibly easy to make. The creamy polenta crust is topped with savory tomato sauce, gooey mozzarella cheese, and your favorite pizza toppings.
Ingredients: 1 cup polenta. 2 cups water. 1/2 tsp salt. 1/2 tsp black pepper. 1/2 cup tomato sauce. 1 cup shredded mozzarella cheese. 1/4 cup sliced black olives. 1/4 cup sliced cherry tomatoes. 1/4 cup chopped fresh basil leaves. 1/4 cup grated Parmesan cheese.
Instructions: In a saucepan, bring 2 cups of water to a boil. Add 1 cup of polenta, stirring constantly. Reduce heat and simmer for 20 minutes until polenta thickens. Stir in salt and black pepper. Pour the cooked polenta onto a greased baking sheet and spread it evenly. Allow it to cool and set for about 30 minutes. Preheat the oven to 425F 220C. Spread tomato sauce over the cooled polenta. Sprinkle mozzarella cheese over the tomato sauce. Top with black olives and cherry tomatoes. Bake in the oven for 15-20 minutes or until cheese is melted and bubbly. Remove from the oven and sprinkle with fresh basil leaves and Parmesan cheese. Cut into slices and serve hot.
