Ground beef quesadillas with cheese are a tasty and filling meal that the whole family will love. Ground beef that has been seasoned, melted cheddar cheese, and a variety of fresh toppings are put between two flour tortillas to make these quesadillas. They're great for a quick dinner or an appetizer that everyone loves.
Ingredients: 1 lb ground beef. 1 small onion, chopped. 2 cloves garlic, minced. 1 packet taco seasoning. 1/2 cup water. 8 large flour tortillas. 2 cups shredded cheddar cheese. 1 cup diced tomatoes. 1/2 cup diced green bell pepper. 1/4 cup sliced black olives. 1/4 cup chopped fresh cilantro. Sour cream and salsa for serving.
Instructions: In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain excess fat. Add chopped onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes until the onion becomes translucent. Stir in the taco seasoning and water. Simmer for 5 minutes until the mixture thickens and the flavors meld. Place one tortilla in a heated non-stick skillet or on a griddle. Sprinkle with a portion of shredded cheddar cheese and top with a portion of the beef mixture. Add diced tomatoes, diced green bell pepper, sliced black olives, and chopped cilantro on top of the beef mixture. Place another tortilla on top and press gently. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted. Repeat with the remaining tortillas and filling ingredients. Cut the quesadillas into wedges and serve with sour cream and salsa.
