Ingredients: 4 large russet potatoes. 8 eggs. 8 slices of bacon. 1 cup shredded cheddar cheese. Salt and pepper to taste. Chopped green onions for garnish optional.
Instructions: Preheat your oven to 400F 200C. Scrub the potatoes thoroughly and dry them with paper towels. Poke several holes in each potato with a fork and place them directly on the oven rack. Bake the potatoes for about 45-60 minutes or until they are tender when pierced with a fork. While the potatoes are baking, cook the bacon in a skillet over medium heat until it's crispy. Remove and drain on paper towels, then crumble it. Once the potatoes are done, remove them from the oven and let them cool slightly. Slice off the top third of each potato and scoop out some of the flesh to create a well for the eggs. Place one cracked egg into each potato well, season with salt and pepper, and sprinkle with shredded cheddar cheese. Return the stuffed potatoes to the oven and bake for an additional 12-15 minutes or until the egg whites are set, but the yolks are still slightly runny. Remove from the oven and top each potato with crumbled bacon and chopped green onions if desired. Serve hot and let everyone customize their own baked spud with eggs.
