Ingredients: - 1-2 pounds fresh tomatillos - 5 fresh serrano or jalapeño peppers - 3-6 garlic cloves, unpeeled - 1 large onion 6 shallots, peeled and chopped - 2 teaspoons coarse sea salt - juice of 1/2 lime (plus more as desired) . Directions: 1. Preheat broiler. 2. Remove tomatillo husks and rinse under warm water to remove stickiness. 3. Spread peppers, garlic, onion and tomatillos on a baking sheet and broil, 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred, about 7 minutes. 4. Peel garlic and pull off tops of chiles. 5. Happy Monday! What would you make with this spread? 🍅🌽🥦 . The last couple weeks have been tough and I haven’t cooked as much. I did manage to use up the majority of these veggies with a few simple dishes: - the corn was roasted whole in the oven and eaten simply with butter and harissa. Had a craving for street festival corn and this 100% hit the spot. - the tomatoes, as usual, were roasted and stored for sauce with the majority of the basil. - I roasted the fennel, cauliflower and romanesco with some turmeric spiced olive oil and served over homemade white bean hummus.(Recipe on the blog) That was my favorite simple dinner by far. Paired it with some basil olive oil dressing and 👌🏽👌🏽👌🏽 - the potatoes are still on my counter waiting to be cooked. Made a sweet corn and cucumber gazpacho recently that really hit the spot. (Recipe below) Super refreshing and so quick to throw together! Plus pretty too, no? Oh and I added the leftover cucumber peels to my water 😝 . Have you made gazpacho before? What’s your favorite type? . Gazpacho Recipe: Ingredients: 1 large cuke, peeled seeded diced (1/2 the peels reserved) fresh sweet corn (1/4 cup) half a lemon splash of rice wine vinegar 1/4 cup cashew milk salt and pepper couple roasted shallots (optional) . Directions: Add all ingredients into a blender. Blend until thoroughly combined. Taste test and adjust seasoning. Serve chilled. . Relish topping: minced radish, jalapeño and sliced roasted shallots. There’s a chill in the air over here (right on schedule) and I’m enjoying the last of these pickled green beans from August. This recipe is for a small amount of beans and so simple! Ingredients: 1-2 lb green beans 1.5 cups white vinegar 1.5 cups water 2 tbsp salt 4-6 cloves of garlic, crushed 2 tsp pickling spice blend, divided 1 tsp red pepper flakes, divided . Directions: * Clean, trim and pack green beans and garlic into two clean pint jars. * In a small pot over medium heat, bring vinegar, water, and spices to a boil. * Remove from heat and pour directly over green beans. * Put the tops on the jars, let cool too room temp. * Store in fridge. Got weekend plans? Me, I’ve got a date with a bushel of tomatoes. These puppies have been slow-roasted to perfection for sauce. They were bruised and damaged too, sold for a mere $2/lb at the market. Can you tell from looking at them now though? 😘 . Roasted Tomato Sauce: * Preheat oven to 350 * Rinse, core and slice tomatoes into thick wedges * Place evenly in baking dish * Drizzle with olive oil, salt and pepper * Bake in the oven for at least an hour, stirring once during the cook time . Lemon blueberry scones + good tea = my kinda morning/afternoon treat/dessert.👌🏽 💙 The problem with fresh blueberries is that they’re so good, I don’t want to eat them any way but straight up. But I guess sometimes they can be baked into tasty treats too 😋 💙 These lemon blueberry scones are a lil riff on a really simple scone recipe from @allrecipes. And they are SO good. . INGREDIENTS: - 1 cup fresh blueberries - Zest from 1 lemon - 3 cups AP flour - ½ cup sugar - 3 tsp baking powder - ½ tsp Kosher salt - ¾ cup butter - 1 egg beaten - 1 cup milk . Small batch strawberry basil jam. Because sometimes you want to make jam and only have a little bit of berries. Recipe below and more details on the blog. Link in profile! . You will need: • At least a pint of fruit • A lemon • Sugar • A heavy-bottom skillet • A wooden spoon • A small jar . - Take some fruit (overripe or nearly overripe is best). Clean and chop it small. Add to a shallow heavy-bottom pan over medium heat. - Sprinkle some sugar over the top. - Add a squeeze of fresh lemon juice. - As the fruit cooks, smash it with the back of a wooden spoon. - Stir frequently. - It’s ready when you can run a spoon through the pan and the mixture stays separated.
