This Potato and Leek Galette is a hearty, rustic dish that's great for any event. Layers of thinly sliced leeks and potatoes are nestled in flaky puff pastry to make a tasty meal or side dish.

Ingredients: 2 large potatoes, thinly sliced. 2 leeks, thinly sliced. 1/4 cup olive oil. Salt and pepper to taste. 1 sheet puff pastry, thawed. 1/2 cup grated Parmesan cheese.

Instructions: Preheat oven to 375F 190C. In a large bowl, toss potato slices and leek slices with olive oil, salt, and pepper until evenly coated. Arrange potato and leek slices alternately in concentric circles on the puff pastry, leaving a border around the edges. Sprinkle Parmesan cheese over the top. Fold the edges of the puff pastry over the filling, pleating as necessary. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the potatoes are tender. Let cool slightly before slicing and serving.
