This Fresh Heirloom Tomato Salad is a celebration of the summer season's finest produce. With a vibrant mix of colorful heirloom tomatoes, fragrant herbs, and a zesty dressing, it's a refreshing and flavorful side dish that pairs perfectly with grilled meats or as a light, healthy appetizer.
Ingredients: 4-5 large heirloom tomatoes, mixed varieties and colors. 1/4 cup extra-virgin olive oil. 2 tablespoons red wine vinegar. 1 clove garlic, minced. 1/4 cup fresh basil leaves, torn. 1/4 cup fresh mint leaves, torn. Salt and pepper, to taste. 1/2 cup red onion, thinly sliced. 1/2 cup feta cheese, crumbled. Balsamic glaze, for drizzling optional.
Instructions: Cut the heirloom tomatoes into thick rounds and put them on a platter to serve. Put extra-virgin olive oil, red wine vinegar, minced garlic, torn basil leaves, and torn mint leaves in a small bowl. Put them all together and whisk them together. Add pepper and salt to taste. Spread the dressing on top of the tomato slices. The tomatoes should have thin slices of red onion and crumbled feta cheese on top of them. For an extra flavor boost, you can drizzle balsamic glaze over the salad if you want to. Serve right away and enjoy!
