Instead of pulled pork, this Smoky Tahini Jackfruit Sandwich is a great vegan option. When seasoned and cooked right, jackfruit has the texture of meat, and tahini makes it creamier and gives it more flavor. Perfect for a quick dinner or lunch that fills you up!
Ingredients: 2 cans young green jackfruit in water, drained and rinsed. 2 tablespoons olive oil. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 teaspoon smoked paprika. 1/2 teaspoon cumin. 1/2 teaspoon chili powder. 1/4 cup vegetable broth. Salt and pepper to taste. 4 whole grain burger buns. 1/4 cup tahini. 1 tablespoon lemon juice. 2 cups mixed greens.
Instructions: Using your hands, shred the jackfruit into small pieces, removing any tough cores. In a skillet, heat olive oil over medium heat. Add onion and garlic, saut until softened. Add shredded jackfruit, smoked paprika, cumin, and chili powder. Cook for 5 minutes. Pour in vegetable broth and simmer for another 10 minutes until jackfruit is tender. Season with salt and pepper to taste. In a small bowl, mix tahini and lemon juice to create a sauce. Toast the burger buns. Spread tahini sauce on the bottom half of each bun. Top with a generous portion of smoky jackfruit mixture. Add a handful of mixed greens. Cover with the top half of the bun. Serve warm and enjoy!
