First pickled beans of the year! Recipe courtesy of @rachelcooksblog . . . Pickled Green Beans Stuff you need: 3 sprigs Dill, fresh leaves 1 clove Garlic 1 1/2 lb Green beans, fresh 1 tbsp Granulated sugar 1 1/2 tbsp Kosher salt 1 tsp Mustard seeds, whole 1 tsp Peppercorns, whole 1/4 tsp Red pepper flakes 1/4 cup Apple cider vinegar 2 cups Water Instructions: In medium sized pot, combine water, vinegar, salt, and sugar; over medium heat, bring to a boil, boiling until sugar and salt is dissolved, stir occasionally. Set aside to cool off. Place garlic clove, mustard seeds, peppercorns, and red pepper flakes at the bottom of a large jar (Make sure your beans fit in snugly). Arrange green beans vertically in jar and tuck dill into the jar. Pour the brine into the jar, covering green beans completely. Cover jar and place in the fridge overnight or preferably three days or more before eating. Store the jar of beans in the fridge for up to 1 month.
