Hey y’all. So I know lately, I’ve just been hitting y’all with pictures. So I decided to pop in and say Hey and maybe offer a little light advice. So I know some people hate to cook everyday. Tahini Chicken with Bok Choy & Mango Salad Ingredients -3 tbsp Tahini well stirred (sesame paste) -4 tsp honey divided -4 4 oz skinless boneless chicken thighs (I use breast) -1 tbsp olive oil -1/2 tsp kosher salt -1/4 tsp black pepper -2 tbsp toasted sesame oil -2 tbsp unseasoned rice vinegar -1 tbsp reduced-sodium soy sauce (I don't use do to hashimoto's) -4 cups thinly sliced baby Bok Choy -2 cups thinly sliced red cabbage -1 1/2 cups chopped peeled mango -fresh cilantro Directions 1. Combine Tahini and 1 tbsp honey in a small bowl stirring with a whisk. Heat a grill pan over med-high. Rub chicken with olive oil and sprinkle with salt and pepper. Add chicken to pan cooking 4-5 minutes per side or until done. Brush Tahini mixture over both sides of the chicken cooking at least 30 seconds on each side or until lightly charred. Remove chicken from pan and cut into 1 inch pieces. 2. Combine remaining 1 tsp honey, sesame oil, vinegar and soy sauce in a large bowl. Add Bok Choy, cabbage and mango and toss to coat. Divide salad evenly among 4 bowls and top with chicken. Sprinkle with cilantro and enjoy.
