The Black Bean Quesadilla Burger is a delicious and vegetarian-friendly burger that combines the flavors of a quesadilla with a classic burger. It's hearty, flavorful, and perfect for a meatless meal option.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 1/4 cup red bell pepper, finely chopped. 1/4 cup corn kernels frozen or canned. 1/4 cup cilantro, chopped. 1 tsp cumin. 1/2 tsp chili powder. Salt and pepper to taste. 4 burger buns. 1 cup shredded cheddar cheese. 1 cup salsa. 1/2 cup sour cream. Lettuce, tomato, and avocado slices for garnish.
Instructions: Use a fork or potato masher to mash the black beans in a large bowl. Bread crumbs, corn, cilantro, cumin, chili powder, salt, and pepper should all be mixed into the mashed beans. Mix everything together well. Make a patty out of each of the four pieces of mixture. Place the bean patties on a grill or skillet over medium-high heat. Cook for four to five minutes on each side, or until they are hot all the way through and have grill marks. In the last minute of cooking, cover the grill or skillet and sprinkle a lot of shredded cheddar cheese on top of each patty. This will melt the cheese. Dot the burger buns with butter and toast them on the grill or in a toaster until they are just barely browned. Spread salsa on the bottom half of each bun. Then put a bean patty with melted cheese, lettuce, tomato slices, and avocado slices on top of each patty. Put sour cream on the top half of the bun and then put it on top of the burger. Enjoy it hot with extra salsa!
