This Fiesta Lime Shrimp Salad is a quick and healthy meal that tastes great and is full of bright colors. Bright lime dressing gives the soft shrimp and fresh vegetables a big taste boost. Your taste buds will love it!
Ingredients: 1 lb large shrimp, peeled and deveined. 1 tsp olive oil. 1 tsp chili powder. 1/2 tsp cumin. Salt and pepper to taste. 6 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cup corn kernels fresh or frozen. 1/2 cup black beans, drained and rinsed. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro, chopped. 1/2 cup shredded cheddar cheese. 1 avocado, sliced. 1 lime, juiced. 2 tbsp sour cream. 2 tbsp salsa. 1/4 cup tortilla strips optional, for garnish.
Instructions: Mix chili powder, cumin, salt, and pepper with olive oil in a bowl. Toss the shrimp in the bowl to cover them with the spice mix. Warm up a pan over medium-high heat. Add the shrimp and cook for two to three minutes on each side, or until they turn pink and opaque. Take it off the heat and set it aside. To make a salad, put mixed salad greens, corn, black beans, red onion, cilantro, and shredded cheddar cheese in a large bowl. Put cooked shrimp and avocado slices on top of the salad. To make the dressing, mix the salsa, sour cream, and lime juice together in a small bowl. Put the dressing on top of the salad. If you want, you can add tortilla strips as a garnish for extra crunch. Gently toss the salad to mix all the ingredients together. Serve right away and enjoy!

Instructions: Before you start cooking, heat the oven to 375F 190C. You can mix ground pork, ground beef, cooked macaroni, shredded cheddar cheese, breadcrumbs, milk, ketchup, minced garlic, chopped onion, salt, black pepper, oregano, thyme, smoked paprika, and beaten eggs in a large bowl. Combine the parts until they are well mixed. Place the mixture in a loaf pan and shape it into a loaf. Put the dish in an oven that has already been heated for 45 to 50 minutes, or until the internal temperature reaches 71F 160C. Take it out of the oven and let it cool for 5 minutes before cutting it. This warm take on a classic dish is sure to please! Serve the Macaroni and Cheese Meat Loaf slices.

Ingredients: 2 oranges, peeled and segmented. 1 grapefruit, peeled and segmented. 1 lime, peeled and sliced. 1/4 cup pomegranate seeds. 1/4 cup sliced almonds, toasted. 2 cups mixed greens. 1/4 cup honey. 2 tablespoons olive oil. 1 tablespoon fresh lemon juice. Salt and pepper to taste.
Instructions: The mixed greens, orange and grapefruit segments, lime slices, and pomegranate seeds should all be put together in a large bowl. To make the dressing, mix honey, olive oil, fresh lemon juice, salt, and pepper in a small bowl with a whisk. Pour the dressing over the salad and toss it around gently to coat. Toast some almonds and sprinkle them on top for extra crunch. Serve your refreshing Citrus Salad right away and enjoy it!
