These Funfetti Pancakes are a fun and colorful twist on traditional pancakes. They're perfect for celebrating a special occasion or adding a touch of whimsy to your breakfast routine.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup buttermilk. 1/2 cup milk. 1 large egg. 2 tablespoons unsalted butter, melted. 1/2 teaspoon vanilla extract. 1/4 cup rainbow sprinkles. Whipped cream and extra sprinkles for garnish optional.
Instructions: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the rainbow sprinkles, being careful not to overmix. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup portions of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown on both sides. Remove the pancakes from the skillet and keep them warm. Repeat the process with the remaining batter, adding more butter or cooking spray to the skillet as needed. Serve the funfetti pancakes with whipped cream and extra sprinkles if desired. Enjoy your delightful Funfetti Pancakes!
