Make your Christmas breakfast extra special with these Grinch Candy Cups Pancakes! They are fluffy, green, and feature a surprise red heart candy in the center, just like the Grinch's heart growing three sizes. Kids and adults alike will love this festive holiday treat.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons unsalted butter, melted. Green food coloring. Red heart-shaped candies like M&M's. Whipped cream. Maple syrup.
Instructions: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Add green food coloring to achieve the desired Grinch-like green color for your pancakes. Preheat a griddle or non-stick pan over medium-high heat and lightly grease it with cooking spray or butter. Pour 1/4 cup portions of the pancake batter onto the hot griddle and spread them slightly to form round pancakes. Place a red heart-shaped candy in the center of each pancake while it's cooking. Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown on the other side. Remove the Grinch Candy Cups Pancakes from the griddle and let them cool slightly. To serve, top each pancake with a dollop of whipped cream and drizzle with maple syrup.
