Ingredients: 1 small head of cauliflower, cut into florets. 1 cup of cooked green or brown lentils. 1/2 cup of pomegranate seeds. 1/4 cup of chopped fresh parsley. 2 tablespoons of olive oil. 2 tablespoons of balsamic vinegar. 1 teaspoon of ground cumin. Salt and pepper to taste. Mixed salad greens for serving.
Instructions: Preheat your grill or chargrill pan to medium-high heat. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, ground cumin, salt, and pepper. Place the cauliflower on the grill and cook for 3-4 minutes on each side, or until they have nice grill marks and are tender but still crisp. Remove from heat and let cool slightly. In another bowl, combine the cooked lentils, pomegranate seeds, chopped parsley, and the remaining 1 tablespoon of olive oil. Whisk together the balsamic vinegar, salt, and pepper in a small bowl to create the dressing. To assemble the salad, place a bed of mixed salad greens on serving plates. Top with the grilled cauliflower and lentil mixture. Drizzle the dressing over the salad. Sprinkle with additional pomegranate seeds and parsley for garnish. Serve immediately and enjoy!
