With these Gluten-Free Paleo Thin Mints, you can enjoy the classic treat in a healthier way. They are great for people on a paleo or gluten-free diet because they are made with almond flour and dairy-free chocolate. Without any gluten or grains, you can enjoy the cool minty taste and rich chocolate coating.
Ingredients: 2 cups almond flour. 1/4 cup cacao powder. 1/4 cup coconut oil, melted. 1/4 cup pure maple syrup. 1/2 tsp peppermint extract. 1/4 tsp sea salt. 1/2 cup dairy-free chocolate chips.
Instructions: Put almond flour and cacao powder in a bowl and mix them together. The dry mix should now have melted coconut oil, pure maple syrup, peppermint extract, and sea salt added to it. Mix until you get a dough. Put the dough between two pieces of parchment paper and roll it into a ball. Make it 1/4-inch thick by rolling it out. Cut out mint rounds with a small round cookie cutter and place them on a baking sheet lined with parchment paper. This will make the mints firmer. Put the tray in the freezer for 15 to 20 minutes. Melt the dairy-free chocolate chips in a microwave or double boiler while the mints are cooling. Spread out each mint on the parchment paper, then dip it all the way through in the melted chocolate. The chocolate should now be set, so put the covered mints back in the freezer for another 10 to 15 minutes. Enjoy your gluten-free Paleo Thin Mints!
