On Pancake Day, people all over the world love these British Shrove Tuesday pancakes. With a simple topping of lemon juice and caster sugar, they are thin and tasty.
Ingredients: 200g all-purpose flour. 2 large eggs. 300ml whole milk. 1 pinch of salt. 1 tbsp granulated sugar. 1 lemon for juice. Caster sugar for topping.
Instructions: In a mixing bowl, sift the flour and add a pinch of salt. In a separate bowl, beat the eggs and sugar together until well combined. Gradually add the milk to the egg mixture while continuously whisking. Pour the egg and milk mixture into the bowl with flour and whisk until you have a smooth batter. Heat a non-stick frying pan over medium-high heat and add a small amount of butter or oil. Pour a ladleful of the batter into the hot pan and swirl it around to spread evenly. Cook for about 1-2 minutes until the edges start to lift and the pancake is golden brown underneath. Flip the pancake using a spatula and cook the other side for another 1-2 minutes until golden brown. Repeat the process with the remaining batter, adding a little butter or oil to the pan as needed. Once cooked, transfer the pancakes to a plate, squeeze fresh lemon juice over them, and sprinkle with caster sugar. Serve hot and enjoy your Traditional British Shrove Tuesday Pancakes!
