Ingredients: 1 lb ground beef. 1 packet taco seasoning. 1 can diced tomatoes. 1 can black beans, drained and rinsed. 1 cup corn kernels. 8 oz pasta penne or rotini. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. Sour cream and sliced green onions for garnish.
Instructions: Cook pasta according to package instructions. Drain and set aside. In a large skillet, brown ground beef over medium heat, breaking it apart with a spoon. Once the beef is cooked through, drain excess fat and return to the skillet. Add taco seasoning, diced tomatoes, black beans, and corn to the skillet. Stir to combine. Simmer for 5-7 minutes, allowing flavors to meld. Add cooked pasta to the skillet and toss until well combined. Sprinkle shredded cheese over the top and cover until melted. Garnish with chopped cilantro, sour cream, and sliced green onions before serving.
