Home made vegan dumplings! They're pretty easy to make but they take a while. Used a pasta sheeter to roll out the wrappers. Stuffed with onions, cabbage, carrots and green onions. Place on a hot pan and once they brown, add a little water and steam! Dipping sauce is just soy, pickled ginger, chilli flakes and green onions. Yummilicious. Now that's what we call pasta. Learning how to make hand rolled and cut pasta.. and honestly it's not difficult. It just takes a long time to shape it. Here's an interesting tip. The dough freezes really well. Make a big batch, divide into small pieces and freeze. You'll have to defrost it for a few hours and you'll be ready to have freshly made pasta with nothing other than flour and water or eggs. It's also really fun for a pasta making party. Today at school we made orecchiette pasta from scratch. Made the dough and rolled out these cute lil orecchiettes. Turns out the amount of water you had to the dough really makes a difference! If you add too little or too much water then the dough is really difficult to work with. Mine had about 60% water to flour and it was really sticky. I would go with a 45-50% hydration next time. Here's a tip for making a whole bunch of curries in less than 10 min. Make a batch of the base (ground sauteed onions, skinned and sauteed tomatos) and split them up into small-single serving batches and freeze. When you need it you can plop them into your pan with different spices and use different things to turn it into a gravy (coconut milk, cream, yogurt, water and avocado) and anything else you want to put into it.
