Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 egg. 1 teaspoon vanilla extract. 1/2 cup semi-sweet chocolate chips. 1/4 cup white chocolate chips. 1 tablespoon vegetable oil.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in the semi-sweet chocolate chips. Take small portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie. Bake for 10-12 minutes or until the cookies are set but still soft in the center. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the white chocolate chips with the vegetable oil in 20-second intervals, stirring between each interval, until smooth. Gradually add the melted white chocolate to the mixture, mixing until smooth. In a separate bowl, whisk together the flour, baking soda, and salt. Blend the mixture in a food processor until it is smooth and creamy. Cover a cake pan and press the mixture into the bottom to make the base of the cheesecake. Put the cake tin in the freezer to set. Make the salted caramel while you wait. To do this, blend dates, coconut milk, coconut sugar, sea salt flakes, and water together until the mixture is smooth and creamy. Place the cheesecake base back in the freezer and spread the salted caramel evenly over it. Let it set for at least 4 hours, or until it is firm.
