Vegan pea soup | vegaaninen hernekeitto
Peasoup has always been one of my favourite foods and creating a vegan version of it was one of the first things I did when I started to learn how to cook plant-based. I wanted to create a version which makes people like it more than the original. This version of it gets a little kick from the strong chili and the celery stalks, making the soup tastier than the soup from the childhood memories.
Hernekeitto on aina ollut yksi lempiruoistani ja sen veganisointi oli yksi ensimmäisistä asioista, joita tein kun opettelin laittamaan ruokaa kasviperäisesti. Halusin luoda version, josta ihmiset pitävät enemmän kuin alkuperäisestä. Tämä versio saa hieman potkua vahvasta chilistä ja selleristä tehden keitosta maukkaamman kuin lapsuusmuistoissa.
Ingredients:
3 dl dried peas
2 grated carrots
4 bay leaves
1 litre of water
1 tablespoon of whole black peppers
1 decilitre of soy protein granules
2 chopped celery stalks
garlic salt
2 cubes of veggie stock
2 teaspoon of marjoram
2 pieces of dried chili
Method:
Rinse the peas and soak them for about 12 hours/over night.
strain the peas and put them in a saucepan. Add about 1 later of water to cover the peas.
Wait until the water boils and add the vegetable stock.
Boil for about an hour and add the grated carrot and chopped celeries to the soup. Also add the pay leaves, black peppers, garlic salt, marjoram and chilis.
Boil for about half an hour and add the soy.
Add some mustard for taste if you want.

2 raastettua porkkanaa
4 laakerinlehteä
1 l vettä
ruokalusikallinen kokonaisia mustapippureita
1 dl soijarouhetta
2 pilkottua sellerinvartta
valkosipulisuolaa
2 liemikuutiota
2 tl meiramia
2 kpl kuivattuja pieniä chilejä
Valmistus:
Huuhtele herneet ja laita likoamaan noin 12 tunniksi tai yön yli.
Siivilöi vesi pois herneistä ja laita herneet kattilaan. Lisää kattilaan noin 1 litra vettä, jotta herneet peittyvät.
Odota, että vesi alkaa kiehumaan ja lisää joukkoon kasvisliemikuutiot.
Keitä keittoa noin tunti ja lisää porkkanaraaste ja pilkotut sellerit keittoon. Lisää myös laakerinlehdet, mustapippurit, valkosipulisuola, meirami ja chilit.
Anna keittyä noin puoli tuntia ja lisää soijarouhe.

A hearty and comforting vegetarian split pea soup cooked low and slow in the slow cooker, perfect for a cozy meal.
Ingredients: 1 cup dried green split peas. 3 cups vegetable broth. 2 carrots, diced. 2 stalks celery, diced. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 bay leaf. Salt and pepper, to taste. 2 cups water.
Instructions: Run cold water over the split peas and let them drain. Put carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper in a slow cooker. Add the vegetable broth. Put in the water and mix it in. For 8 hours, or until the split peas are soft, cover and cook on low heat. Once it's done, take out the bay leaf and throw it away. Using an immersion blender, blend the soup until it is smooth or the consistency you want it to be. Check the seasoning and make changes if needed. If you want, you can serve it hot and top it with fresh herbs.

Cook Time: 480 minutes

A hearty and comforting soup made with ham hock and soft split peas.
Ingredients: 1 cup dried split peas. 6 cups water. 1 ham hock. 1 onion, chopped. 2 carrots, diced. 2 celery stalks, diced. 2 cloves garlic, minced. 1 bay leaf. Salt and pepper to taste.
Instructions: Put split peas in a big pot with water after washing them. Place the bay leaf, onion, carrots, celery, garlic, and ham hock in the pot. Bring to a boil, then lower the heat and stir every now and then for an hour. Take out the ham hock, shred the meat, and then put it back in the pot. Add pepper and salt to taste. Simmer for another 15 to 20 minutes. Warm up and serve.

Cook Time: 80 minutes
