A delightful sandwich combining the unique flavors of zaatar-seasoned halloumi cheese with the freshness of cherry tomatoes and the brininess of olives, all nestled between slices of wholesome whole grain bread.
Ingredients: 2 slices of whole grain bread. 150g halloumi cheese, sliced. 1 tablespoon zaatar seasoning. Handful of cherry tomatoes, sliced. Handful of olives, sliced. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Preheat a skillet over medium heat. Brush olive oil on one side of each bread slice. Place the halloumi slices on the skillet and sprinkle zaatar seasoning over them. Cook the halloumi for 2-3 minutes on each side until golden brown. Remove the halloumi from the skillet and set aside. In the same skillet, toast the bread slices, oiled side down, until lightly golden brown. Remove the bread slices from the skillet and assemble the sandwich. Layer the halloumi slices, cherry tomatoes, and olives on one bread slice. Season with salt and pepper to taste. Top with the other bread slice. Cut the sandwich in half and serve immediately.
