Ingredients: 4 boneless, skinless chicken breasts. 1 cup soy sauce. 1/2 cup honey. 1/4 cup brown sugar. 1 tablespoon minced garlic. 1 teaspoon ground ginger. 1/2 teaspoon black pepper. 1 onion, sliced. 2 bell peppers, sliced. 2 cups baby carrots. 1 cup pineapple chunks, drained optional. 2 tablespoons cornstarch. 2 tablespoons water. Cooked rice or noodles, for serving.
Instructions: In a bowl, mix together soy sauce, honey, brown sugar, garlic, ginger, and black pepper. Place chicken breasts in the slow cooker and pour the sauce mixture over them. Add sliced onion, bell peppers, carrots, and pineapple chunks if using to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender. In a small bowl, mix cornstarch and water to create a slurry.
