1 lb ground beef (quality beef from butcherbox.ca)
1/2 lb ground pork (optional, also at butcherbox.ca)
2 tbsp fresh parsley, chopped (or 1 tsp dried)
4 hoagie rolls or sub rolls
1 1/2 cups shredded mozzarella (or provolone)
Optional: extra Parmesan, fresh basil, red pepper flakes
Mix the meatballs. Combine beef, pork, breadcrumbs, Parmesan, egg, garlic, parsley, Italian seasoning, onion powder, salt, and pepper.
Form 16 meatballs, about golf ball size.
Brown in a skillet with olive oil over medium heat, 5–6 minutes.
Simmer in marinara 8–10 minutes until cooked through (165°F).
Toast rolls under the broiler 1–2 minutes.
Assemble with meatballs, sauce, and mozzarella.
Broil 1–2 minutes until cheese melts.
Top with Parmesan, basil, or red pepper flakes. Serve hot.
