Ingredients: 1 cup quinoa. 2 cups water. 1/2 cup balsamic vinegar. 1/4 cup olive oil. 1 teaspoon honey. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste.
Instructions: Rinse the quinoa thoroughly under cold water. In a medium saucepan, bring the water to a boil. Add the rinsed quinoa and reduce heat to low. Cover and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Remove the quinoa from heat and let it cool completely. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing. In a large bowl, combine the cooked quinoa, diced red and yellow bell peppers, cucumber, cherry tomatoes, red onion, and chopped basil leaves. Pour the balsamic dressing over the salad and toss to coat everything evenly. Chill the salad in the refrigerator for at least 30 minutes before serving. Serve chilled and garnish with additional basil leaves if desired.

Ingredients: 2 large whole wheat tortillas. 1 cup diced cucumber. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped Kalamata olives. 1/2 cup crumbled feta cheese. 1/4 cup chopped fresh parsley. 1/4 cup extra-virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and pepper to taste. 2 cups fresh spinach leaves.
Instructions: Dice the cucumber, tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley. Put them all in a large bowl and mix them together. Extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper should all be mixed together in a separate small bowl. This is how the dressing is made. To make sure everything is covered, pour the dressing over the salad and toss it around. Place the whole wheat tortillas on the table and top each one with a fresh spinach leaf.
