This Fiesta Taco Casserole is a tasty and simple dish that combines the tastes of tacos in a casserole form. It's great for a dinner during the week or a fun family get-together. Put your favorite toppings on it and enjoy the party!

Ingredients: 1 lb ground beef. 1 small onion, chopped. 1 packet taco seasoning mix. 1 can 15 oz black beans, drained and rinsed. 1 cup frozen corn kernels. 1 can 15 oz diced tomatoes, undrained. 1 cup salsa. 2 cups shredded cheddar cheese. 2 cups crushed tortilla chips. 1/2 cup sour cream optional. 1/4 cup sliced black olives optional. Chopped fresh cilantro for garnish optional.

Instructions: Preheat your oven to 350F 175C. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat. Stir in the taco seasoning mix, black beans, frozen corn, diced tomatoes, and salsa. Cook and stir until the mixture is heated through. In a 9x13-inch baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and half of the shredded cheddar cheese. Repeat the layers. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the casserole is heated through. If desired, top the casserole with sour cream, sliced black olives, and chopped fresh cilantro. Serve hot and enjoy!
