This steak salad is a tasty and filling meal because it has the richness of beef, the creaminess of mashed potatoes, the freshness of pesto, and the tanginess of Gorgonzola cheese.
Ingredients: 2 beef steaks sirloin or ribeye. Salt and pepper to taste. 2 large potatoes, peeled and chopped. 2 tablespoons butter. 1/4 cup milk. 1 cup fresh basil leaves. 2 cloves garlic. 1/4 cup pine nuts. 1/4 cup grated Parmesan cheese. 1/4 cup olive oil. 4 cups mixed greens. 1/2 cup cherry tomatoes, halved. 1/4 cup crumbled Gorgonzola cheese.
Instructions: On both sides, season the steaks with salt and pepper. Boil water in a pot and add the potatoes. Cook until they are soft, then drain. Put the cooked potatoes in a bowl and add the milk and butter. Mash the potatoes until they are smooth. Add pepper and salt to taste. Put basil, garlic, pine nuts, and Parmesan cheese in a food processor and blend them together. Pulse until the food is very small. Slowly add olive oil to the processor while it's running until a smooth pesto forms. Get a grill or grill pan hot, but not too hot. For medium-rare, grill the steaks for about 4 to 5 minutes on each side. Let it sit for a few minutes before cutting it. Place mixed greens and cherry tomatoes on plates to make the salad. Put some mashed potatoes, sliced steak, and pesto on top. Add crumbled Gorgonzola cheese on top. Serve right away and enjoy!
