Keto Cauliflower Tots taste great and are a great low-carb alternative to regular tater tots. They are made with cheese and cauliflower and are crispy on the outside and soft on the inside. You can eat them as a snack or as a side dish.
Ingredients: 3 cups cauliflower florets. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1 large egg. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper to taste. Cooking spray or olive oil for greasing.
Instructions: Preheat oven to 400F 200C. Steam cauliflower florets until tender, about 5-7 minutes. Drain well and pat dry with paper towels to remove excess moisture. In a large bowl, combine cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well until evenly combined. Shape the mixture into small tots and place them on a baking sheet lined with parchment paper or greased with cooking spray. Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy, flipping halfway through baking for even browning. Serve hot with your favorite dipping sauce. Enjoy!
