There are lots of fresh flavors and bright colors in this vegan southwest salad with cilantro ranch dressing. It tastes great with a zesty cilantro ranch dressing on top of crunchy greens, creamy avocado, tangy tomatoes, and hearty black beans.
Ingredients: 1 can black beans, drained and rinsed. 1 cup corn kernels, fresh or frozen. 1 cup cherry tomatoes, halved. 1 avocado, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 lime, juiced. Salt and pepper to taste. 4 cups mixed greens. For the Cilantro Ranch Dressing:. 1/2 cup vegan mayonnaise. 1/4 cup unsweetened almond milk. 1 tablespoon fresh lime juice. 1/4 cup fresh cilantro, chopped. 1 clove garlic, minced. 1/2 teaspoon onion powder. 1/2 teaspoon dried dill. Salt and pepper to taste.
Instructions: In a large bowl, combine the black beans, corn, cherry tomatoes, avocado, red onion, cilantro, and lime juice. Season with salt and pepper to taste. Toss gently to combine. In a separate bowl, whisk together all the ingredients for the Cilantro Ranch Dressing until smooth and creamy. Divide the mixed greens among serving plates. Top the greens with the black bean and corn mixture. Drizzle the Cilantro Ranch Dressing over the salad. Garnish with additional cilantro, if desired. Serve immediately and enjoy!
