Salt and pepper to taste. 8 small tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. Salsa for serving optional.
Instructions: Set the grill or grill pan over medium-high heat to heat it up. Put chili powder, cumin, garlic powder, salt, and pepper in a small bowl. Mix them together. Use the spice mix to coat the chicken breasts. For 6 to 8 minutes on each side, or until done, put the chicken on the grill. After letting the chicken rest for a while, cut it into strips. For about 30 seconds on each side, warm the tortillas up on the grill. Put chicken strips on each tortilla to make tacos. Shred lettuce, diced tomatoes, sour cream, cilantro, and cheese on top. If you want, you can serve it with salsa on the side.

A tasty and easy meal is shredded chicken mixed with a smoky chipotle BBQ sauce and put on toasted buns. You can add extra toppings if you like.
Ingredients: 2 lbs boneless, skinless chicken breasts. 1 cup BBQ sauce. 2 chipotle peppers in adobo sauce, minced. 1 tbsp adobo sauce. 1/4 cup brown sugar. 1 tbsp apple cider vinegar. 1 tsp garlic powder. 1/2 tsp onion powder. 1/2 tsp smoked paprika. Salt and pepper to taste. 8 sandwich buns. Sliced red onion and pickles for serving optional.
Instructions: Put adobo sauce, brown sugar, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper in a slow cooker. Add the BBQ sauce and mix well. Cover the chicken breasts well with the sauce mixture before putting them in the slow cooker. Cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is soft and can be shred with a fork. When the chicken is done, use two forks to shred it right in the slow cooker, making sure to mix it well with the sauce. If you want, you can toast the sandwich buns. Put together the sandwiches by putting a lot of the chipotle BBQ chicken on each bun. If you want, you can add pickles and sliced red onion on top. Enjoy while hot!
