Spicy Chicken Alfredo
Lately I’ve been in my own little world and totally neglected the blog but don’t worry; I’m still cooking and creating regularly and just need to get back in my groove. So here it is, my first recipe in awhile, and I think it was totally worth the wait (licking my lips)!
4 T butter, divided
2 chicken breasts
1 t Tony Cachere’s Original Creole Seasoning, plus more for sprinkling
12 oz farfalle pasta
1/2 onion, diced
1 Yellow & orange bell pepper, thinly sliced
1 jalapeño, seeded and minced
3 large garlic cloves, minced
3/4 cup dry white wine
1 cup parmigiana-reggiano, grated
1 cup heavy cream
1 cup half-and-half
1 t Tabasco or similar type hot sauce
4 scallions, thinly sliced for garnish
1/4 cup cilantro, chopped for garnish
Melt 2 T butter in large dutch oven over medium high heat.
Season chicken liberally with Tony’s (you don’t need to season the chicken with additional salt since Tony’s has salt in it).
Cook chicken in butter until golden brown on both sides and cooked through.
Set aside and cut into bite size pieces once cooled.
Cook pasta according to package instructions for al dente.
Drain, set aside.
Meanwhile, melt additional 2 T butter in same pot as the chicken and reduce heat to medium.
Cook onion, bell pepper and jalapeño until soft.
Add garlic, sauté until fragrant, about 30 seconds.
Add wine and bring to a boil.
Reduce wine by about half.
Whisk in cream and half and half and reduce until sauce reaches desired thickness (coats the back of a spoon).
Off heat whisk in cheese, tabasco and cajun seasoning.
Taste and season with additional tabasco or salt to reach desired heat level.
Add reserved pasta and chicken to sauce and toss gently to coat.
Garnish with cilantro and green onion.
