Here is what the two pound bag of pecans looks like in the smoker.
All the smoke is coming out of that little perforated canister I made. You can see it under the bottom tray of pecans. I posted about it three days ago. I lit it with a torch, let it burn for fifteen minutes, then blew out the flame. After you blow out the short flame it smolders like this for about an hour.
Now we wait. In two weeks I will apply the candy coating.
