Ingredients: 1 cup brown rice. 2 cups vegetable broth. 1 tablespoon turmeric. 1 teaspoon ground cumin. 1 teaspoon paprika. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup cherry tomatoes, halved. 1 can black beans, drained and rinsed. 1 avocado, sliced. Fresh cilantro, for garnish. Salt and pepper to taste.
Instructions: In a saucepan, combine brown rice, vegetable broth, turmeric, cumin, and paprika. Bring to a boil, then reduce heat, cover, and simmer for 40-45 minutes or until rice is cooked and liquid is absorbed. In a separate pan, heat olive oil over medium heat.
