A delicious and satisfying salad with crispy goat cheese rounds served in vibrant red bowls. Perfect for a light lunch or appetizer.
Ingredients: 4 oz goat cheese. 1/2 cup breadcrumbs. 1 egg. 4 cups mixed greens. 1/4 cup cherry tomatoes. 1/4 cup cucumber slices. 2 tablespoons balsamic vinaigrette. Salt and pepper to taste. 2 red bowls.
Instructions: Turn on your oven and heat it up to 375F 190C. Cut the goat cheese into rounds that are about 1/2 inch thick. Soak each round of goat cheese in an egg, and then cover it with breadcrumbs. Spread the goat cheese rounds out on a baking sheet that has been lined with parchment paper. Bake for 10 to 12 minutes, or until they are golden brown and crispy. Mix the mixed greens, cherry tomatoes, and cucumber slices in a large bowl to make the salad while you wait. Pour the balsamic vinaigrette over the salad and mix it all together by tossing it. Add pepper and salt to taste. Take the goat cheese rounds out of the oven when they are golden and let them cool for a minute. Place the crunchy rounds of goat cheese on top of the salad that has been made in two red bowls. Serve your crispy goat cheese salad right away and enjoy it!
