These delightful passionfruit macarons are a burst of tropical flavor in every bite. The crisp and chewy almond shells are filled with tangy passionfruit curd, creating a perfect balance of sweetness and acidity. They are perfect for special occasions or as a treat any time.
Ingredients: 100g almond meal. 100g powdered sugar. 2 large egg whites, at room temperature. 1/4 cup granulated sugar. 1/4 teaspoon cream of tartar. 1/4 cup passionfruit curd store-bought or homemade. Yellow food coloring optional. Powdered sugar, for dusting.
Instructions: Set the oven temperature to 300F 150C. Use silicone baking mats or parchment paper to line a baking sheet. Place the powdered sugar and almond meal in a food processor. Pulse until finely chopped and thoroughly mixed. Move to a bowl and place it there. Use an electric mixer to beat the egg whites in a different mixing bowl until they become frothy. Beat in the cream of tartar after adding it. Add the powdered sugar gradually and beat until stiff, glossy peaks form. For a striking color, feel free to incorporate a few drops of yellow food coloring. With a spatula, lift the egg whites and gently fold in two or three additions of the almond meal and powdered sugar mixture until the batter is smooth and forms a ribbon-like consistency. Spoon the macaron batter into a piping bag that has a round tip attached. Leaving some space between each macaron, pipe tiny rounds onto the baking sheet that has been prepared. To get rid of any air bubbles, lightly tap the baking sheet against the counter. After the macarons are no longer sticky to the touch and a skin has formed on the surface, let them sit at room temperature for 20 to 30 minutes. Bake for 15 to 18 minutes, or until the macarons are set and have formed feet, in a preheated oven. Take care to avoid overbaking. After taking the macarons out of the oven, allow them to cool fully on the baking sheet. After the macarons have cooled, carefully take them off of the silicone mat or parchment paper. Line one macaron shell's flat side with a small dollop of passionfruit curd, then cover with another shell. For an added sweetness, sprinkle powdered sugar over the macaron tops. Present and savor your homemade macarons with passionfruit!

Instructions: In a large bowl, whip the cream until stiff peaks form. Gently fold in the condensed milk until well combined. Add melted white chocolate and passionfruit pulp, gently folding until evenly distributed. In a separate bowl, mix crushed waffle cones with melted butter until combined. Spread a layer of waffle cone mixture evenly on the bottom of a loaf pan or ice cream container. Pour the ice cream mixture over the waffle cone crust. Top with remaining waffle cone mixture, pressing down lightly. Cover with plastic wrap and freeze for at least 6 hours or overnight until firm. Once frozen, scoop and serve in waffle cones or bowls.
