These muffins are delicious, and they have a lovely ribbon of buttery cinnamon sugar running through them. This is a great sweet breakfast or snack.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/2 cup chocolate chips. 1/4 cup unsalted butter, melted. 1/2 cup milk. 1/4 cup vegetable oil. 1 large egg. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp salt.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with paper liners. In a mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt. Mix well. In another bowl, whisk together the melted butter, milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips into the muffin batter. Fill each muffin cup with batter, about 2/3 full. In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of cinnamon to create a cinnamon sugar mixture. Sprinkle the cinnamon sugar mixture on top of each muffin and swirl it gently with a toothpick to create ribbons of cinnamon sugar. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Enjoy your homemade Cinnamon Chocolate Chip Muffins!
