Ingredients: 2 ripe bananas, mashed. 4 large eggs. 1/4 cup almond butter. 1/4 cup coconut flour. 1 tsp baking powder. 1/2 tsp cinnamon. 1/4 tsp salt. 1/4 cup blueberries. 1/4 cup chopped spinach. Cooking spray coconut oil.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine mashed bananas, eggs, almond butter, coconut flour, baking powder, cinnamon, and salt. Mix until smooth. Gently fold in the blueberries and chopped spinach into the batter. Grease a muffin tin with cooking spray or coconut oil. Pour the batter evenly into the muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and a toothpick inserted into the center comes out clean. Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm and enjoy your Paleo breakfast muffins!
