This salad with fresh cabbage is a great way to use cabbage from the garden. It's colorful, crunchy, and full of flavor, so it's great as a side dish or light meal.
Ingredients: 1 small head cabbage, shredded. 2 carrots, grated. 1 bell pepper, thinly sliced. 1/2 red onion, thinly sliced. 1/4 cup fresh parsley, chopped. 1/4 cup olive oil. 2 tablespoons apple cider vinegar. 1 tablespoon maple syrup. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Shred cabbage, grate carrots, slice bell pepper, slice red onion, and chop parsley. Put all of these ingredients in a large bowl. Mix apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper in a small bowl with a whisk. Add the dressing to the cabbage mix and mix it all together by tossing. Put it in the fridge with the lid on for at least 30 minutes before serving so the flavors can mix. Enjoy!
