With lots of colorful vegetables and savory flavors, this Easy Vegan Teriyaki Bowl is a tasty and filling meal. It's easy to make and great for dinner during the week.
Ingredients: 1 cup cooked brown rice. 1 cup broccoli florets. 1 cup sliced bell peppers. 1 cup sliced carrots. 1 cup sliced mushrooms. 1/2 cup teriyaki sauce. 2 tablespoons sesame oil. 1 tablespoon minced garlic. 1 tablespoon minced ginger. 1 tablespoon cornstarch. 2 tablespoons water. Salt and pepper to taste. Sesame seeds and green onions for garnish.
Instructions: In a small bowl, mix cornstarch and water to make a slurry. Set aside. Heat sesame oil in a large skillet over medium heat. Add minced garlic and ginger to the skillet, saut for 1 minute. Add sliced carrots and broccoli florets, cook for 3-4 minutes until slightly tender. Add sliced bell peppers and mushrooms to the skillet, cook for an additional 2-3 minutes. Pour teriyaki sauce over the vegetables, stir well to combine. Add the cornstarch slurry to the skillet, stirring continuously until the sauce thickens. Season with salt and pepper to taste. Serve the teriyaki vegetables over cooked brown rice. Garnish with sesame seeds and sliced green onions before serving.
