Ingredients: 12 oz pasta, cooked and cooled. 2 cups shredded cooked chicken. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup corn kernels, cooked. 1/4 cup fresh cilantro, chopped. 1/2 cup barbecue sauce. 1/4 cup mayonnaise. 1 tablespoon apple cider vinegar. Salt and pepper to taste. 1/2 cup shredded cheddar cheese optional.
Instructions: Mix the cooked pasta, chicken shreds, cherry tomatoes, red onion, corn, and cilantro in a large bowl. Put the barbecue sauce, mayonnaise, and apple cider vinegar in a different small bowl and mix them together with a whisk. Add the barbecue sauce to the pasta and toss it around until it's well covered. Add pepper and salt to taste. You can add shredded cheddar cheese on top if you want to. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Enjoy! Serve cold.

Ingredients: 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz green beans, drained and rinsed. 1 can 15 oz wax beans, drained and rinsed. 1/2 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup olive oil. 2 tablespoons white wine vinegar. 1 tablespoon sugar. Salt and pepper to taste.
Instructions: In a large bowl, combine the kidney beans, green beans, and wax beans. Add the chopped red onion and parsley to the bowl. In a small bowl, whisk together the olive oil, white wine vinegar, sugar, salt, and pepper. Pour the dressing over the bean mixture and toss to coat evenly. Cover and refrigerate for at least 1 hour before serving. Serve chilled and enjoy!
