Ingredients: 4 tilapia fillets. 2 lemons, juiced and zested. 2 tablespoons fresh rosemary, chopped. 2 cloves garlic, minced. Salt and pepper to taste. 4 cups mixed greens e.g., spinach, arugula, and kale. 1 cucumber, thinly sliced. 1 red onion, thinly sliced. 1 cup cherry tomatoes, halved. 1/4 cup Kalamata olives, pitted and sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons extra-virgin olive oil. 1 tablespoon balsamic vinegar.
Instructions: To make a marinade, put the lemon juice, lemon zest, chopped rosemary, minced garlic, salt, and pepper in a bowl. Put the tilapia fillets in a plastic bag that can be closed again and again, and pour the marinade over them. Put the bag in the fridge for 30 minutes with the lid on. Warm up your grill or grill pan over medium-high heat. Take the marinated tilapia fillets out of the bag and grill them for three to four minutes on each side, or until they are fully cooked and have a little char on the outside. Take them out of the heat and give them a minute to rest. Put the mixed greens, sliced cucumber, red onion, cherry tomatoes, Kalamata olives, and crumbled feta cheese in a large salad bowl.
