This Honey Lime Chicken Salad is a refreshing and flavorful meal. The combination of grilled chicken, honey-lime dressing, and fresh vegetables creates a perfect balance of sweet and tangy flavors. It's a great option for a light and healthy lunch or dinner.
Ingredients: 2 boneless, skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup honey. 2 limes, juiced. 2 cloves garlic, minced. 6 cups mixed greens e.g., lettuce, spinach, arugula. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup sliced almonds. 1/4 cup feta cheese, crumbled. Fresh cilantro leaves for garnish.
Instructions: On both sides, salt and pepper the chicken breasts. Blend the honey, lime juice, olive oil, and minced garlic together in a small bowl. This will make the dressing. Get a grill or grill pan hot, but not too hot. Season the chicken breasts with salt and pepper. Place them on the grill and cook for 6 to 8 minutes on each side, or until they are cooked all the way through and the outside is charred. Take them off the heat and let them cool down for a few minutes. Then cut them into thin strips. Put the mixed greens, cherry tomatoes, cucumber, and red onion in a large salad bowl. Place the chicken slices on top of the salad. Pour the rest of the dressing over the salad and toss it around to coat it. Add chopped almonds and broken up feta cheese to the salad. Add some fresh cilantro leaves as a garnish. Serve right away and enjoy!
