The Fall season means it is the perfect time for chili. 🥣 . This was a big batch of it we made last weekend. Perfect for my current prep since the fat content can be easily tweaked by adding butter, cheese, or cream to a bowl as needed. 👍. _______ Macros (1 cup serving - makes about 8 servings) Protein 26g Fat 5g Net Carbs 2.5g Ingredients - I pack of Mushrooms, diced - 1 Tbs Red Chili Powder - 1/2 tsp Ground Red Pepper - 1/4 tsp Ground Cumin - 1/8 tsp Garlic powder (optional) - 1/8 tsp Black pepper - 1 tsp salt - 8 Tbs Organic tomato paste (publix) - 1 cup Cajun Trinity mixed chopped vegetables (onion, celery, bell pepper - Kroger) - 32 oz Beef for Stew - 12 oz Water Directions - Combine all ingredients inside slow cooker/crockpot. - Cook on High for about 5 - 6 hrs. Stirring occasionally. - Salt, pepper and season to taste. - Chili is ready when the meat easily shreds. Tips - The mushrooms can do a decent job of creating a little bit of a faux bean texture when the mushrooms are sliced thick enough.
