This Keto Mexican Meatloaf is a tasty and low-carb take on regular meatloaf. It's full of spices and vegetables, making it a filling and tasty meal.
Ingredients: 2 lbs ground beef. 1/2 cup almond flour. 1/4 cup chopped cilantro. 1/2 cup diced onion. 1/2 cup diced bell pepper. 2 cloves garlic, minced. 1 tsp ground cumin. 1 tsp chili powder. 1/2 tsp paprika. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 cup sugar-free tomato sauce. 2 large eggs. 1 avocado, sliced for serving.
Instructions: Ground beef, onion, bell pepper, garlic, cumin, chili powder, paprika, salt, black pepper, tomato sauce, and eggs should all be mixed together in a large bowl. Mix well until everything is well mixed. Put the mixture in the Instant Pot and gently press it down to make a loaf shape. Put the lid back on the Instant Pot and set it to high pressure for 25 minutes. After the cooking cycle is over, let the pressure drop naturally for 10 minutes. Then, quickly let go of any remaining pressure. Take the meatloaf out of the Instant Pot with care and let it rest for a few minutes before cutting it.
